Ingredients:

  • Toasted sourdough hoagie style bun
  • Sliced Alberta AAA beef sautéed with mushrooms
  • Swiss cheese
  • Crispy firecracker onions (all-purpose flour + hot sauce, flash fry and season with salt and pepper)
  • Peppercorn mayo
  • Serve with appropriate sandwich side + a ramekin of rosemary jus for dipping (au jus)
  • Large square plate

Method of Preparation:

Step 1: Toast hoagie bun, brush both sides with peppercorn mayo

Step 2: Heat sauté pan with oil, sear mushrooms + sliced beef until 80% cooked

Step 3: Place hot sauté on hoagie bun, sliced Swiss across meat, melt in oven for a minute

Step 4: Toss sliced onion with hot sauce and flour, fry to crispy, finish with salt and pepper

Step 5: Firecracker onions on top of beef sauté
