Sautéed red peppers, house preserved cherry tomatoes, artichoke hearts, caper berries + kalamata olives, with balsamic glistened greens + feta (Grilled or Cajun chicken or Ocean Wise prawn sauté may be added at an extra cost)

Ingredients:

  • One Mediterranean vegetable portion (kalamata olives, caper berries, artichoke hearts + red onions marinated in red wine vinegar + olive oil)
  • Red peppers
  • Creamy balsamic vinaigrette (dairy)
  • Hand cut, mixed organic lettuces + greens
  • Feta cheese, crumbled, balsamic reduction drizzle
  • Large rectangle plate, chilled

Method of Preparation:

Step 1: Sauté Mediterranean vegetables and red peppers until hot, yet firm

Step 2: Toss greens and dressing in a stainless steel bowl until evenly coated plate on one half of plate

Step 3: Crumble feta to finish the salad

Step 4: Place sauté on other half of plate

Step 5: Drizzle balsamic reduction in a zig zag pattern across hot and cold elements
