(gf) cajun seared fresh bc chicken with a chorizo corn sauté + chipotle lime butter finish


  • Double breast of bc chicken, skin on, dredged in cajun spice on skin side
  • Chorizo sausage (pork) corn salsa (cilantro, red onion, corn)
  • Natural Velouté (reduced chicken stock) mounted to finish with chipotle lime butter
  • Red jacket mashed potatoes
  • Locally sourced, seasonal vegetables
  • Large rectangle plate

Method of Preparation:

Step 1: Dredge skin side of double breast of chicken

Step 2: Sear skin side, turn and roast in oven

Step 3: Heat sauté pan with oil, add chorizo, corn salsa

Step 4: Add Velouté, bring to heat, finish with chipotle lime butter, monté au beurre

Step 5: Plate mashed in center, vegetables on one side of mashed, chicken hinged on other side of mashed, sauce napped on leading edge of chicken

Step 6: Garnish with fresh cilantro
