Slow braised, boneless Alberta AAA beef short ribs, napped with natural red wine demi glace

Ingredients:

  • Black Apron Beef Short Ribs, braised in beef stock
  • Natural red wine demi glace (reduced beef stock)
  • Red jacket mashed potatoes
  • Locally sourced, seasonal vegetables
  • Large rectangle plate

Method of Preparation:

Step 1: Poach short ribs in braising liquid

Step 2: plate mashed in center, vegetables on one side of mashed, two pieces of short ribs hinged onĀ other side of mashed

Step 3: demi glace napped to cover short ribs
