The braising of a pork belly is similar to any braising technique. Here are the ingredients Chef Scotty Powell and his team use in the braising liquid.

  • Soy sauce
  • Pineapple juice
  • Orange juice
  • Chinese five spice

Into the oven it goes

The pork belly is then braised at a low temperature for a long period of time. This allows the fat to baste the meat and break down any connective tissue without rendering the fat out entirely.

The sliders are made fresh to order

  1. Two 2 ounce portions of braised pork belly are brushed with an apricot glaze
  2. Two mini pretzel buns are prepared with Wasabi Mayo and Sunomono cucumber slaw

We put this tasty treat together with a purpose. The idea is to balance the sweet with a hint of spice, the richness with the crunch of slaw and on a soft bun. We think our kitchen team nailed it!
